Easy and Delicious 5 Weeknight Dinners to Turn to Again and Again!

Every Monday, our editors present Simply (Weeknight) Recipes, featuring five quick and easy dinner recipes for the week ahead. Did you catch Simply Recipes on CBS Mornings last week? We unveiled the winners of The 2025 Grocery Awards on live TV. These are the most exciting and delicious new products our editors and 75+ food experts tested, which were greatly enjoyed by hosts Gayle King, Vladimir Duthiers, and Tony Dokoupil. Our aim with The Grocery Awards is to recommend products that can help simplify your weeknight dinners.

During my recent trip to New York City for the segment, I stocked my fridge with some of the award-winning products for my kids to easily prepare for dinner while I was away. As a busy mom who travels frequently, I have a set meal plan of frozen pizza, vegetarian sandwiches, and curry that my family can rely on. I’m looking forward to incorporating more award winners into our dinners and would love to hear about your favorites.

Here are five weeknight dinner recipes I’m making for my family this week, along with helpful tips from our contributors:

1. Sesame Soba Noodles: Most soba noodles are cooked perfectly in 4 to 4 1/2 minutes, so check for doneness early.
2. Sheet Pan Salmon With Asparagus: Use an instant-read thermometer to ensure your salmon is cooked just the way you like it.
3. Creamy Tuscan Chicken: If you can’t find chicken cutlets, easily make your own at home.
4. Skillet Cacio e Pepe Tortellini With Wilted Greens: Cook tortellini in a skillet with sauce for a quicker and cleaner meal prep.
5. Easy Wonton Soup: Try bibigo Fully-Cooked Chicken and Cilantro Mini Wontons for a convenient and tasty option.
