However, Shawn Matijevich, a lead chef-instructor at the Institute of Culinary Education, recommends aiming slightly lower for optimal storage. “While all items in the refrigerator have ideal temperature ranges for storage, maintaining a range of 35 to 38°F strikes a good balance,” he suggests.

The temperature control dial in your fridge may vary depending on the model. “Many home refrigerators come equipped with a temperature gauge,” notes Jason Reese, a personal injury attorney specializing in food safety. For older models, using a refrigerator thermometer can ensure that your food is stored at the correct temperature.

Keep in mind that the temperature distribution inside the fridge may not be consistent. “The coldest areas are typically at the back and bottom where cold air settles,” explains Reese. Matijevich adds that these colder spots are ideal for extending the shelf life of meats.

Conversely, the door of the fridge tends to be warmer due to exposure to outside air each time it’s opened. This section is suitable for storing items less sensitive to temperature variations, such as canned beverages.

Matijevich also points out that how you arrange your food can impact the overall temperature distribution. “Areas with restricted airflow may have warmer spots,” he mentions. Dense or tightly packed sections may experience higher temperatures as cool air struggles to circulate freely.

The consequences of incorrect fridge temperatures vary depending on the setting and the types of foods involved.
