As a recipe developer and professional cook, having a few simple go-to recipes on hand is essential for me when it’s time to make dinner after a long day in the kitchen. My Italian dressing chicken is one of my favorites, but this cilantro-lime chicken offers a bright and refreshing twist on that classic dish.

I believe that simple recipes should not compromise on flavor. This cilantro-lime chicken, with just a few ingredients, always leaves my family asking for seconds.

In this recipe, four chicken breasts are marinated in cilantro-lime salad dressing for 15 minutes before being baked in the oven to caramelize and seal in the citrus flavors. The dressing combines with the chicken juices in the pan to create a creamy, tangy sauce to pour over the chicken before serving.

For the best results, I recommend using Briannas Creamy Cilantro Lime dressing for its creamy texture and hint of spice. After cooking, a squeeze of lime and a sprinkle of cilantro add a burst of freshness to the dish.

While I prefer using boneless, skinless chicken breasts for quick cooking, drumsticks or bone-in thighs can also be used. Dark meat like drumsticks and thighs should reach at least 175°F for optimal tenderness. Always check the internal temperature of the chicken for safety.

To make this 2-ingredient cilantro-lime chicken, you’ll need 4 boneless, skinless chicken breasts and 1/2 cup of store-bought cilantro-lime dressing. Simply coat the chicken in the dressing, marinate, bake, and enjoy with optional cilantro and lime wedges.

This chicken is versatile and pairs well with various dishes such as taco bowls, tacos, or as a standalone main course. Leftovers can be stored in the fridge for up to 3 days or in the freezer for up to 1 month. Enjoy!
