Registered dietitian and recipe writer Micah Siva emphasizes the versatility of potatoes as an ingredient. While some individuals advocate for the consumption of raw potatoes, Siva shares a different viewpoint, stating, “While some people tout the benefits of eating raw potatoes, it’s not something I recommend.”

Despite the potential benefits associated with raw potato consumption, health experts express concerns regarding this practice. So why do some individuals opt to eat raw potatoes? According to Shelley Balls, a registered dietitian and nutritionist for Consumer Health Digest, raw potatoes contain a higher vitamin C content compared to cooked potatoes. When potatoes are boiled, their vitamin C content diminishes by 62%, while baking reduces it by 35% due to thermal degradation.

As per the U.S. Department of Agriculture’s food database, a medium raw russet potato contains approximately 16 grams of vitamin C. For perspective, the recommended daily intake of vitamin C is 90 milligrams for men, 75 milligrams for women, and 120 milligrams for pregnant individuals. While raw potatoes may offer a significant amount of vitamin C, there are other food options that are much richer in this essential nutrient. For instance, kale provides about 93 milligrams of vitamin C per 100-gram serving, a medium kiwi contains approximately 56 milligrams, and broccoli offers around 51 milligrams.

Considering the question of whether potatoes are advantageous for one’s health, it is essential to explore the various aspects of this popular food item. Can raw potatoes be safely consumed? While it is technically permissible to eat raw potatoes in moderation, the experience may not be particularly enjoyable, as it may result in a bitter taste and offer only minimal health benefits. On the other hand, there is a risk of potential health issues arising from consuming raw potatoes in excessive quantities.

Shelley Balls cautions, “If you do choose to eat raw potatoes, it’s crucial that you do so in small portions to avoid digestive issues and headaches.” Furthermore, the debate over which type of potatoes is the healthiest remains a topic of interest. While raw potatoes contain higher levels of vitamin C, they also harbor solanine and lectins, which can impede digestion and be toxic in larger amounts.

According to Micah Siva, in small quantities, the presence of solanine and lectins in raw potatoes is generally not a cause for concern. Cooking potatoes effectively reduces the levels of these compounds while retaining their health benefits.
