Review of Meghan Markle’s One-Pot Pasta Recipe
Meghan Markle’s new Netflix series With Love showcases her culinary skills and hosting tips in a beautiful California home. While the show has received mixed reviews, one recipe that has sparked debate is Meghan’s one-pot pasta dish.
Known as single-skillet spaghetti, this unique recipe involves layering all the ingredients in one large skillet, pouring boiling water over them, and letting it cook covered. While this method may not be groundbreaking, it does resemble traditional Italian cooking techniques, creating a creamy sauce through the starch from the pasta.
Meghan explains that this approach allows the starch to stay in the pan, giving the dish a creamy texture without the need for heavy cream. By using less water, the starchy cooking liquid enhances the final dish’s glossiness and richness.
I decided to try Meghan’s recipe myself to see if it lived up to the buzz. While the exact ingredient amounts were not specified, I followed her method as closely as possible and shared my version of the recipe based on the demonstration in the show.
Overall, Meghan’s one-pot pasta technique offers a convenient and flavorful way to create a velvety pasta dish. Whether you’re a fan of Meghan Markle or just looking for a new pasta recipe to try, this method is worth experimenting with in your own kitchen.
Although the pasta wasn’t entirely covered, it turned out well. I did observe that my pasta required a bit more cooking time compared to Meghan’s. This could be because her water quickly boiled upon hitting the skillet, while mine took a bit longer to reach that stage. (It’s worth mentioning that Meghan leaves the stove on after adding the boiling water to ensure the pasta continues to cook.) If you’re making this recipe at home, feel free to test a strand of spaghetti to check if it’s perfectly al dente or needs a bit more time.
When I uncovered the pot and added the greens, the dish initially appeared a bit soupy. However, the liquid— a beautiful, flavorful red—had absorbed the essence of the tomatoes. (Using high-quality tomatoes is highly recommended to elevate the dish!) The liquid itself was incredibly tasty.
As the pasta sat— giving me time to grate some cheese and take a few photos— the sauce thickened wonderfully, enveloping the pasta in a rich tomato glaze that you’ll want to savor with every spoonful. Overall, I have nothing negative to say about this dish. The recipe delivered as expected. It was straightforward, delicious, and easily executed— and truthfully, it tasted fantastic.
