Lemon Pizza Unexpected Hit at Paige Drummond’s Bridal Shower!

Ingredients:

For the crust:
– 1 tsp. active dry yeast
– 1 tsp. granulated sugar
– 3/4 cup warm water (90°F to 100°F)
– 2 cups all-purpose flour, plus extra for dusting
– 1 tsp. kosher salt
– 2 tbsp. olive oil, plus more for brushing

For the pizza:
– 1/2 cup grated parmesan cheese (about 4 ounces)
– 3 garlic cloves, finely chopped
– 2 shallots, thinly sliced
– 1 1/2 cups shredded low-moisture mozzarella cheese (about 6 ounces)
– 1 cup cubed fresh mozzarella cheese (about 4 ounces)
– 1 small lemon, thinly sliced and seeds removed
– 1 tbsp. hot honey, for drizzling
– 1/4 cup fresh basil, cut into a chiffonade

Directions:

For the crust:
1. In a stand mixer bowl, sprinkle yeast and sugar over warm water. Whisk together and let sit until bubbles form, about 5 minutes.
2. Add flour, salt, and 1 tablespoon of olive oil. Mix with the dough hook on low speed until the dough comes together, about 2 minutes.
3. Increase speed to medium-low and mix until well incorporated and sticky, about 2-3 minutes more.
4. Drizzle remaining olive oil over the dough and coat it. Cover the bowl and let it rise until doubled, about 1 hour and 30 minutes.

For the pizza:
1. Preheat the oven to 500°F with a pizza stone or baking sheet on the upper rack.
2. Prepare a baking sheet with foil, oil, and flour.
3. Divide the dough in half, shape into balls, and let rest.
4. Stretch the dough into rounds and transfer to the baking sheet.
5. Brush with olive oil, add toppings, and bake for 12-16 minutes until browned.
6. Drizzle with honey and sprinkle with basil before serving.

Tip:
– If making the dough in advance, wrap and refrigerate for up to 2 days. Let it sit at room temperature for 30 minutes before shaping.
