Spinach and Frisée Salad by Becky Luigart-Stayner for Country Living

Ingredients:
– 6 slices of bacon, diced
– 1 large shallot, chopped
– 1/4 cup red wine vinegar
– 1 tablespoon pure honey
– 8 cups salad greens (such as baby spinach, frisée, or arugula)
– 1 bunch of fresh chives, chopped
– 2 tablespoons olive oil
– Kosher salt and freshly ground black pepper
– 4 oz. pecorino Romano or Parmesan cheese, shaved (about 1 cup)
Directions:
1. In a medium skillet, cook bacon over medium heat until crispy, stirring occasionally, for 5 to 8 minutes. Add shallot and cook, stirring, until tender for about 1 minute. Remove from heat and mix in vinegar and honey, scraping up any browned bits from the pan.
2. In a bowl, combine salad greens, chives, and oil. Add the bacon dressing and 1/2 cup of cheese, then toss to combine. Season with salt and pepper. Top with the remaining 1/2 cup of cheese. Serve immediately.
