Ingredients
– 1/4 cup extra-virgin olive oil
– 3 medium sweet onions, halved and sliced
– All-purpose flour, for rolling
– 1 sheet frozen puff pastry, thawed
– 1/4 teaspoon kosher salt
– 1/8 teaspoon cracked black pepper
– 1/3 to 1/2 cup Niçoise olives, pitted
– 2 ounces canned anchovies
– Dried thyme leaves for garnish
Instructions
1. Preheat the oven to 400°F (200°C) with a cast iron skillet inside.
2. Sauté onions in the skillet with olive oil once preheated.
3. Roll out thawed puff pastry, top with onions, olives, and anchovies.
4. Bake until golden, around 20-25 minutes.
5. Garnish with dried thyme and serve warm.
Place a sheet of aluminum foil over the skillet and let it roast in the oven for about 20 minutes. After that, remove the foil, sprinkle some salt and pepper, give it a good stir, and continue roasting until the onions turn a lovely golden color and become soft, which should take an additional 20 to 25 minutes.
