**Ingredients**
**Chocolate Crunch Layer:**
– 10 Oreos
– 2 tbsp. unsalted butter, melted
– 1/8 tsp. kosher salt
– 2 oz. dark chocolate (preferably 60% cacao), finely chopped
– 2 tsp. refined coconut oil
**Strawberry Mousse & Topping:**
– 1/2 tsp. unflavored gelatin
– 1 lb. fresh strawberries, stemmed, hulled, plus whole strawberries for serving
– 1/4 cup (50 g) granulated sugar
– 2 tbsp. cornstarch
– 1 tbsp. fresh lemon juice
– 2 cups heavy cream, divided
– 3 oz. dark chocolate (preferably 60% cacao), finely chopped
– 1 tbsp. confectioners’ sugar
**Directions**
**Chocolate Crunch Layer:**
1. Preheat the oven to 350°F. Cut the Oreos into 1/2″ pieces.
2. In a bowl, mix the Oreos with melted butter and salt. Spread on a baking sheet lined with parchment paper.
3. Bake for 6-8 minutes until fragrant. Let it cool.
4. Melt the chocolate in the microwave and stir in the coconut oil. Coat the Oreos with the melted chocolate and refrigerate until firm.
**Strawberry Mousse & Topping:**
1. Sprinkle gelatin over cold water in a bowl.
2. Blend the strawberries in a food processor and strain if desired. Add sugar, cornstarch, and lemon juice in a pot and heat.
3. Add the gelatin to the strawberry mixture and let it cool.
4. Whip 1 cup of cream until stiff peaks form. Fold into the strawberry base.
5. Spoon crunchies into parfait glasses, top with mousse, and refrigerate.
6. Heat 1/2 cup of cream and pour over chopped chocolate to make ganache. Pour over the mousses and refrigerate until firm.
7. Whip the remaining cream with confectioners’ sugar until medium peaks form. Top the mousse with cream, crunchies, and strawberries.
